Roses not only look beautiful in the garden or in a vase, but also make delicious preserves and drinks.

Choose strongly scented roses that haven’t been sprayed with anything noxious and pick the flowers early in the morning before the heat of the day. Shake out any lurking insects and then remove the petals. I find it easiest to snip around and around the flower with scissors, leaving the slightly bitter tasting base of the petals.

Turn lemon cordial pink and scented, add a delicate flavour to syllabub or scatter rose petals over a salad.
