Raspberries are best picked and eaten on the same day, so when they’re in full production, it’s good to preserve a few for the autumn. I like to make a supply of freezer jam, which is wonderfully fresh and fruity though a little runny and a few bottles of Raspberry Vinegar, which I use mainly in salad dressings and for alleviating a sore throat. I don’t love frozen raspberries but a small supply means I can make Raspberry Loaf Cake at any time of year.
