I have a fondness for drinking ‘in season’ and Violet Liqueur is a beautiful floral drink for the spring. I’ll happily drink this neat, poured over ice (preferably with a flower or two encased in the ice cubes) but my favourite way to drink this is to pour a little violet liqueur into a glass and top it up with sparkling wine. Alternatively, drizzle the liqueur over fruit or whip it into cream to make a syllabub.

Gather the violet petals early in the morning, but make sure they’re dry.
